Healthy Dinner Recipes for Two

Cooking for two is the sweet spot: no waste, no endless leftovers, and portions that are easy to keep balanced. Here are three weeknight dinners we cook regularly — each serves exactly two, uses everyday supermarket ingredients, and is on the table in under an hour.

A quick note on how we describe these meals: we keep it factual. They are built around the NHS Eatwell Guide — plenty of vegetables, a source of protein, and moderate amounts of wholegrain or starchy foods — with no miracle claims attached.

Recipe 1: Lemon herb chicken with roasted vegetables

Lemon Herb Chicken with Roasted Vegetables — Juicy roasted chicken breasts with lemon, garlic and herbs, served over honey-roast root vegetables and broccoli. One tray, minimal washing up.

Details

Prep time: 15 minutes | Cook time: 35 minutes | Total time: 50 minutes. Servings: 2. Course: Dinner. Cuisine: Mediterranean. Calories: approx. 540 kcal per serving. Keywords: healthy chicken dinner, dinner for two, roasted vegetables.

Ingredients

  • 2 chicken breasts, about 150g each
  • 500g baby potatoes, halved
  • 200g broccoli, cut into florets
  • 1 red pepper, cut into chunks
  • 2 tablespoons olive oil
  • 1 lemon — half juiced, half cut into wedges
  • 2 garlic cloves, crushed
  • 1 teaspoon dried oregano
  • Salt and black pepper

Instructions

  1. Heat the oven to 200°C (180°C fan / gas 6). Toss the potatoes with 1 tablespoon of the oil, salt and pepper on a large roasting tray and roast for 15 minutes.
  2. Meanwhile, rub the chicken breasts with the remaining oil, lemon juice, garlic, oregano, salt and pepper.
  3. Add the chicken, broccoli, red pepper and lemon wedges to the tray. Roast for 20–25 minutes, turning the vegetables halfway, until the chicken is cooked through with no pink remaining and the juices run clear.
  4. Rest the chicken for 5 minutes, then slice and serve over the vegetables with the roasted lemon wedges squeezed over.

Notes

Chicken is high in protein and low in saturated fat. Swap the potatoes for butternut squash to vary it; check the chicken’s internal temperature reaches 75°C if you have a food thermometer. Counts as 2 of your 5 a day.

Recipe 2: Speedy salmon and greens stir-fry

Speedy Salmon and Greens Stir-Fry — Crisp-skinned salmon fillets with egg noodles and crunchy greens in a ginger-soy glaze — ready in half an hour.

Details

Prep time: 10 minutes | Cook time: 20 minutes | Total time: 30 minutes. Servings: 2. Course: Dinner. Cuisine: Asian-inspired. Calories: approx. 650 kcal per serving. Keywords: salmon stir fry, healthy fish dinner, dinner for two.

Ingredients

  • 2 salmon fillets, about 140g each, skin on
  • 150g dried medium egg noodles
  • 200g mixed stir-fry vegetables (pak choi, peppers, sugar snap peas)
  • 1 tablespoon sesame oil
  • 2 tablespoons reduced-salt soy sauce
  • 1 tablespoon honey
  • 1 thumb-sized piece of ginger, grated
  • 2 garlic cloves, sliced
  • 1 spring onion, sliced, to serve
  • Sesame seeds, to serve (optional)

Instructions

  1. Cook the noodles according to the packet, drain and set aside. Mix the soy sauce, honey and half the ginger in a small bowl.
  2. Heat half the sesame oil in a large frying pan or wok over a medium-high heat. Fry the salmon skin-side down for 4 minutes until crisp, flip and cook 2–3 minutes more until just cooked through. Remove and keep warm.
  3. Add the remaining oil to the same pan. Stir-fry the vegetables, garlic and remaining ginger for 3–4 minutes until just tender.
  4. Add the noodles and the soy-honey mixture, toss for 1 minute until everything is glossy. Serve topped with the salmon, spring onion and sesame seeds.

Notes

Salmon is a source of omega-3 fatty acids and high in protein. Using reduced-salt soy sauce keeps the sodium sensible. Counts as 2 of your 5 a day.

Recipe 3: Hearty red lentil and vegetable soup

Hearty Red Lentil and Vegetable Soup — A thick, warming soup of red lentils, carrot and celery with cumin — cheap, filling and endlessly reheatable.

Details

Prep time: 10 minutes | Cook time: 30 minutes | Total time: 40 minutes. Servings: 2 generous bowls. Course: Dinner. Cuisine: British. Calories: approx. 400 kcal per serving. Keywords: lentil soup, healthy soup recipe, vegetarian dinner for two.

Ingredients

  • 150g dried red lentils, rinsed
  • 2 carrots (about 200g), diced
  • 1 onion (about 150g), chopped
  • 2 celery sticks (about 80g), diced
  • 1 tablespoon olive oil
  • 2 garlic cloves, crushed
  • 1 teaspoon ground cumin
  • 1 litre vegetable stock
  • Salt and black pepper
  • Natural yoghurt and fresh coriander, to serve (optional)

Instructions

  1. Heat the oil in a large saucepan over a medium heat. Soften the onion, carrot and celery for 8 minutes, stirring occasionally.
  2. Stir in the garlic and cumin and cook for 1 minute until fragrant.
  3. Add the lentils and stock, bring to the boil, then simmer for 25 minutes until the lentils are completely soft and starting to break down.
  4. Blend half the soup for a thick texture (or all of it for smooth), season well, and serve with a spoonful of yoghurt and coriander if you like.

Notes

Red lentils are high in fibre and a good source of plant protein, and this soup is naturally low in fat. It keeps for 3 days in the fridge and freezes well — handy for batch cooking. Counts as 2 of your 5 a day.

Eating well, simply

These three recipes follow the same simple template the NHS Eatwell Guide recommends: build the plate around vegetables, add a sensible portion of protein, and include some starchy food for energy. Cooking at home also means you control the salt, sugar and oil — small amounts go a long way when everything is fresh. If you are planning the biggest home-cooked meal of the year, our Christmas Day 2026 guide covers timings too.

Portion note: the quantities above are written for two average adult appetites. If you are very active or cooking for teenagers, add an extra handful of noodles, potatoes or bread on the side rather than doubling the main recipe.

If you enjoy a warming bowl, our carrot and coriander soup recipe makes four generous portions and freezes beautifully — ideal for easy lunches.

Frequently asked questions

What is a healthy dinner for two?

A balanced plate: roughly half vegetables or salad, a quarter protein (chicken, fish, eggs, beans or lentils) and a quarter starchy food (potatoes, rice, noodles or wholegrain bread). All three recipes here follow that pattern.

How many calories should dinner be?

It depends on the person, but for many adults a main evening meal of around 500–700 kcal fits comfortably within a day’s needs. The three recipes here range from about 400 to 650 kcal per serving, before any bread or extras.

Can I meal-prep these for the week?

The lentil soup is ideal for meal prep — it keeps 3 days refrigerated and freezes for up to 3 months. The chicken traybake reheats well for 2 days. Cook the salmon fresh; it is a 30-minute recipe, so it hardly needs prepping.

Are these recipes suitable for vegetarians?

The lentil soup is vegetarian as written (check your stock is vegetarian). The chicken and salmon recipes are not, but the vegetable bases work well with halloumi, tofu or extra beans.

Where can I find official healthy-eating guidance?
